  1. Grilled Tofu Perfect for vegetarians or if you need a changeup from the usual steak and burgers. Make sure to use extra firm tofu and to press/dry your tofu as much as possible. Cut tofu into slabs for putting directly on the grill or cut into cubes for skewers. Marinate your tofu in your favorite marinade and sauces or season and make a dipping sauce. Make sure to spray or oil the grill so that the tofu doesn’t stick                                                                                              .
  2. Greek Salad Take advantage of the fresh tomatoes and cucumbers and make a greek salad. You’ll also need feta cheese, olives, olive oil, red wine vinegar and pepper. If you want to make it more finger friendly put the tomato, feta, cucumber and olive on a stick and just drizzle with dressing.
  3. Grilled Avocado Slice in half an avocado, brush with oil and lemon or lime juice and season with whatever you like. Throw them on the grill and you can either eat them as is or add some salsa to the middle.
  4. Hummus Blend some chickpeas with tahini, lemon juice, garlic and season to taste and your hummus is good to go. Slice up some veggies or toast up some pita and you have a great appetizer.
  5. Shrimp Peel and throw the shrimp in with some oil, lemon juice and seasoning or marinade for a couple hours.Slide on some skewers and cook for a couple minutes and they’re good to go. If you don’t have time to marinate wrap them in tinfoil with the oil, lemon juice and seasoning and throw some peppers and veggies in.
  6. Zucchini Rolls Use a vegetable peeler to peel long strips of zucchini. Chop up some veggies or meat and roll them tightly in the zucchini so it looks like a sushi roll. If it fails stick a toothpick or skewer in it to hold it together.
  7. Watermelon Pizza Slice your watermelon so it looks like a pizza slice. Throw some feta cheese, balsamic vinegar, olives and mint.basil on. If you aren’t a fan of feta or olives you can also throw some berries on and drizzle with yogurt.
  8. Fruit skewers There’s so much fruit in season at this time of year, it’s easy to create a great looking skewer out of what’s available.
  9. Vietnamese salad rolls Buy some rice wrappers. Quickly dip them in warm water so that they become foldable and you can wrap whatever veggies or meats you want in.
  10. Banana ice cream Slice a ripe banana and freeze. Blend the bananas until it turns into an ice cream like substance. Add things like peanut butter, chocolate, cocoa, berries or honey or just keep it banana flavored.
